Dead fat possum on Berkeley street this morning

This guy looks better fed than our country possums. I've just never wanted to skin and gut a possum although I'm sure they are good eatin' Actually I hear people trap them and feed them for a few weeks before offing. I've skinned squirrels, 2 foxes, 2 skunks, a weasel, a bobcat, several raccoons, many deer --  all road-kill, no problem, and have the beautiful skins. One of these days I'll do a possum, then roast him. Country people, you'll understand this.

Ugh, Lloyd. I happened on this picture right after a meal. It might not have been so bad, but I think 'possums are ugly to begin with.

But hey- a dead 'possum's a good 'possum!

Loyd I'm a recently countried person and I understand. But I wouldn't eat a city possum no way. It's an oversized rat. A country possum though... that'd be another story. ;-)

First I have to say yuck!
Second, opossums are actually kinda cute. I've accidentally fed a couple of city opossums outside a sliding glass door (trying to feed outside cat, which later became an inside cat).
But I appreciate that you're only skinning road kill and not a hunting for sport.

When stressed, possums exude a foul odor that would discourage most people to consider eating them. I don't think it affects the flavor of the meat. And if they don't see it coming, they might not have time to secrete the scent.

I just had this conversation at a dinner meeting last night....what we choose to eat and not eat is cultural rather than reasonable. If possums had lent themselves to domestication we'd probably think they were delicious.

Possum is great in chilli. I have a friend who likes possum cooked in butter with sweet potatoes.

I ate my first possum in November visiting friends in North Carolina. Their neighbor had been regularly killing animals that were getting into their chickens, and just leaving them in the woods. When my friends heard about this they just said that they'd take care of eating them. Noel fixed possum the night we stayed there. Grilled it over a fire with herbs and oil. Dandelion greens cooked in a pot on the clay oven. It was delicious, fat tasted like pork.
